I love hot sauce.  There are few foods I consume without hot sauce.  One of the attributes I appreciate about a sauce is.....does it run....or does it stay where I pour it.  While hot sauces have water - many have only a few other ingredients. While they deliver heat - they run on your plate.  I appreciate a sauce with some viscosity or thickness.  These sauces stay on the desired portion of the meal and sauces flavor mixes well.
